Whole Wheat Rotini Pasta Salad
Ingredients
12 ounce
whole wheat rotini pasta
1/4 cup
apple cider vinegar
1/4 cup
olive oil
1/4 cup
crumbled feta cheese
6 leaves
fresh basil, chopped
to taste
salt
to taste
ground black pepper
3
tomatoes, chopped
2 large
carrots, chopped
1 bunch
asparagus, trimmed and chopped
1 bunch
green onions
4 cloves
garlic, minced
Instructions
STEP 1
Boil salted water; cook rotini for 8 minutes.
STEP 2
Rinse rotini with cold water; drain.
STEP 3
In a bowl, whisk vinegar and oil. Mix in feta, basil, salt, and pepper.
STEP 4
Toss tomatoes, carrots, asparagus, green onions, and garlic in vinaigrette.
STEP 5
Combine cooled pasta with vegetable mix; toss thoroughly.
