Veggie Packed Lasagne

Ingredients
2 cups
chopped onions
2 cloves
garlic
3 cups
mixed vegetables (zucchini, bell peppers, spinach)
9 sheets
lasagna pasta
1 cup
cashew ricotta
1 cup
tofu ricotta
Instructions

In a large pan, sauté chopped onions, garlic, and your choice of vegetables until soft.

Layer the sautéed vegetables with cooked pasta sheets and the cashew and tofu ricotta in a baking dish.

Repeat the layers until all ingredients are used, finishing with a layer of ricotta on top.

Bake in the oven for 30-40 minutes until golden and bubbling.
