Instructions
STEP 1
Crumble tofu to resemble scrambled eggs.
STEP 2
Heat olive oil, garlic, and shallot until crispy.
STEP 3
Stir in tofu, smoked paprika, salt, pepper, and turmeric until combined.
STEP 4
Blend hollandaise ingredients until smooth, adjusting with soy milk if thick. For the hollandaise sauce: 1 cup cashews, soaked overnight and drained 1 teaspoon turmeric powder 1 teaspoon English mustard 1 teaspoon maple syrup 1 teaspoon salt 1/2 lemon, juiced 1 teaspoon olive oil 3/4 cup soy milk
STEP 5
Toast sourdough, then assemble with tofu and hollandaise. Garnish with chives.
