Vegan Cream of Mushroom Soup
Ingredients

onions
1 clove
garlic
2 cups
mushrooms
4 cups
vegetable broth
1/2 teaspoon
thyme
1/2 teaspoon
salt
1/4 cup
coconut milk
Instructions
STEP 1
Sauté onions and garlic until soft.
STEP 2
Add mushrooms and cook until tender.
STEP 3
Stir in vegetable broth and spices; bring to boil.
STEP 4
Blenderize soup until smooth; reheat if needed.
STEP 5
Optionally add coconut milk for creaminess.
