Add herbs like a sprig of rosemary and a bay leaf, along with a few peppercorns, a teaspoon of sea salt, and a couple of crushed garlic bulbs.

Bring it all to a boil and then simmer for about an hour and twenty minutes.

After cooking, shred the meat off the bones and taste to ensure it's seasoned to your liking.

Divide the shredded chicken among bowls and ladle some of the broth and vegetables over it.

Serve with potatoes, greens, and peas, optionally with horseradish sauce or mustard.
