Turmeric & Lentil Soup

red lentils

turmeric

cumin
4 cups
vegetable broth
1 cup
almond milk
to taste

Instructions
STEP 1
In a large pot, heat some oil over medium heat and add chopped onions, garlic, and ginger. Cook until softened.,
STEP 2
Add diced carrots and cook for a few more minutes until they start to soften.,
STEP 3
Stir in the lentils, turmeric, cumin, and vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are tender.,
STEP 4
Once the lentils are cooked, stir in almond milk and season with salt and pepper to taste.,
STEP 5
Blend the soup until smooth if desired, then serve hot.
