Turkey Avocado Veggie Wraps
Ingredients
1 medium
avocado
2 tablespoons
mayonnaise
1 tablespoon
fresh lime juice
Salt and pepper

tortillas
8 ounces
shaved deli turkey
4 cups
fresh spinach
1 cup
shredded carrots
1
English cucumber
1 cup
cherry tomatoes
2
bell peppers
1/2 cup
Parmesan cheese (optional)
Olive oil and vinegar (optional)
Salt and pepper
Instructions
STEP 1
Mash avocado, mayo, lime juice, salt, and pepper until combined.
STEP 2
Spread avocado mix on each tortilla, leaving a border.
STEP 3
Layer turkey, spinach, carrots, cucumber, tomatoes, and bell peppers on one half.
STEP 4
Sprinkle with salt, pepper, and drizzle olive oil and vinegar if desired.
STEP 5
Roll tightly from the filled edge and seal it.
STEP 6
Cut in half and serve or refrigerate wrapped for an hour.
