Tuna Niçoise Wrap
Ingredients
50g
green beans

egg
2 tbsp
light mayonnaise
1 tbsp
baby capers
4
baby gherkins
1/4 tsp
dried mixed herbs
1 can
tuna

flour tortillas
small handful
baby spinach
1
tomato
20g
black olives
to taste
black pepper
Instructions
STEP 1
Boil water, add green beans, cook for 4 minutes.
STEP 2
Dunk beans in cold water to cool. Drain.
STEP 3
Boil a fridge-cold egg for 8 minutes, then cool under running water.
STEP 4
Mix mayonnaise, capers, gherkins, herbs, and pepper in a bowl.
STEP 5
Add tuna and mix gently without mashing.
STEP 6
Peel and slice the boiled egg into quarters.
STEP 7
On tortillas, layer spinach, green beans, then tuna mixture, egg, and tomato.
STEP 8
Sprinkle with olives, lightly compressing them.
STEP 9
Fold ends of wraps and roll tightly. Wrap in foil if not eaten immediately.
STEP 10
Chill until ready to consume, preferably within 24 hours.
