Instructions
STEP 1
Make the pastry: Mix flour, icing sugar, and lemon zest.
STEP 2
Add butter, rub in, and work in egg yolks to form dough.
STEP 3
Chill dough for 20 minutes, then roll out and line tart tin.
STEP 4
For filling: Simmer milk with lemon peel.
STEP 5
Whisk egg yolks and sugar until pale, then add vanilla and cornflour.
STEP 6
Whisk in milk gradually, heat until thickened.
STEP 7
Pour custard into tart shell, cover with pastry lid, seal edges.
STEP 8
Brush with egg yolk and milk, sprinkle with pine nuts.
STEP 9
Bake for 1 hour, cool in the tin for 5 minutes.
