tofu, diced

coconut milk

spinach

Instructions
STEP 1
Heat a tablespoon of oil in a large pan over medium heat.,
STEP 2
Add chopped onions and cook until soft and translucent.,
STEP 3
Stir in minced garlic and ginger, cooking for another minute until fragrant.,
STEP 4
Add the spices: cumin, coriander, turmeric, and garam masala, and cook for a minute to release their flavors.,
STEP 5
Add diced tofu and chickpeas, stirring to coat them in the spices.,
