The Best Stuffed Peppers
Ingredients
6 large
bell peppers
3 tablespoons
olive oil
1 pound
ground beef
2 medium
onions
4 cloves
garlic
2 teaspoons
thyme leaves
Kosher salt and freshly ground black pepper
spices
4 plum
tomatoes
2 tablespoons
tomato paste
1 cup
dry white wine
1 cup
low-sodium chicken broth
2 cups
cooked rice
2 cups
shredded Muenster cheese
Instructions
STEP 1
Trim the bottoms of peppers to stand.
STEP 2
Cut the tops and remove seeds and membranes.
STEP 3
Microwave peppers with water for 12 minutes.
STEP 4
Cook beef in a skillet until browned, then set aside.
STEP 5
Cook reserved pepper flesh, onions, garlic, and thyme until tender.
STEP 6
Add tomatoes and cook until liquid evaporates, then stir in tomato paste.
STEP 7
Add wine and cook until reduced, then add broth and boil.
STEP 8
Combine mixture with beef and rice, season with salt and pepper.
STEP 9
Preheat oven to 450 degrees F and bake stuffed peppers for 15 minutes.
STEP 10
Top with cheese and bake until golden, about 10–12 minutes.
