The Best Grilled Lobster Tails

Olive oil
8 tablespoons
Unsalted butter
2 cloves
Garlic
1 teaspoon
Lemon zest
2 tablespoons
Lemon juice
1/4 cup
Italian parsley
2 tablespoons
Chives
1 pinch
Cayenne pepper

Lobster tails
1 tablespoon
Kosher salt
Instructions
STEP 1
Soak wooden skewers in water for 30 minutes.
STEP 2
Prepare grill for medium-high heat; brush grates with oil.
STEP 3
Melt butter in a small saucepan over medium-low heat.
STEP 4
Add garlic, cook until sizzling for 30 seconds.
STEP 5
Remove from heat, stir in lemon zest and juice.
STEP 6
Let cool slightly, then stir in parsley, chives, and cayenne.
STEP 7
Cut lobster shells lengthwise with kitchen shears.
STEP 8
Pull shells apart to expose lobster meat.
STEP 9
Skewer the tails to prevent curling while grilling.
STEP 10
Brush with olive oil and sprinkle lightly with salt.

Grill meat-side down for 4 to 5 minutes until shells turn red.

Flip and brush meat with butter. Cover grill lid.

Grill until meat is just white, about 3 minutes.

Flip again, brush with butter, and grill until cooked through.

Remove skewers and serve with extra warm butter.
