The Best Fried Chicken
Ingredients
1 whole chicken
Chicken
4 teaspoons
Kosher salt
4 teaspoons
Light brown sugar
1 teaspoon
Baking powder
3 cups
All-purpose flour
2/3 cup
Cornstarch
2 tablespoons
Garlic powder
2 tablespoons
Onion powder
2 tablespoons
Sweet Hungarian paprika
2 teaspoons
Cayenne pepper
2 cups
Buttermilk
1/2 cup
Hot sauce
2 large
Eggs
8 cups
Vegetable oil
Instructions
STEP 1
Cut the chicken into 10 pieces.
STEP 2
Mix salt, brown sugar, and baking powder; sprinkle on chicken.
STEP 3
Combine flour, cornstarch, garlic powder, onion powder, paprika, cayenne, and salt.
STEP 4
Whisk together buttermilk, hot sauce, and eggs in another bowl.
STEP 5
Dredge chicken in seasoned flour, then dip in buttermilk mixture, back to flour.
STEP 6
Refrigerate the chicken for at least 30 minutes.
STEP 7
Heat oil in a large pot to 300°F.
STEP 8
Fry chicken in batches until golden brown; drain on a wire rack.
