The Best Cinnamon Rolls
Ingredients
3/4 cup
whole milk
1 packet
active dry yeast (2 1/4 tsp)
3 tablespoons
granulated sugar
3
large eggs
2 1/2 teaspoons
kosher salt
2 1/4 cups
bread flour
1/3 cup
whole-wheat flour
3 tablespoons
nonfat dry milk powder
2 3/4 sticks
unsalted butter
1 1/2 cups
dark brown sugar
2 tablespoons
ground cinnamon
1 cup
confectioners' sugar
3 tablespoons
heavy cream
1 teaspoon
vanilla extract
Instructions
STEP 1
Whisk together the milk and yeast in the mixer bowl. Let sit for 10 minutes to dissolve.
STEP 2
In a small bowl, whisk together sugar, eggs, and salt.
STEP 3
Add the flours and milk powder to the yeast, mixing to form a shaggy dough. Use a dough hook to knead until smooth and elastic.
STEP 4
Cover the bowl with plastic wrap, allowing the dough to rise in a warm area until doubled, about 30 to 45 minutes.
STEP 5
Meanwhile, mix together brown sugar, cinnamon, and salt in a bowl, then smash in butter until combined.
STEP 6
On a floured surface, roll the dough into a rectangle and spread the sugar mixture on top. Roll tightly into a log.
STEP 7
Freeze the log for 20 minutes, then cut into 12 pieces and place in a greased baking pan. Let rise for another 40 to 50 minutes.
STEP 8
Preheat the oven to 350°F. Bake until golden brown, about 25 to 30 minutes.
STEP 9
For the glaze, whisk together confectioners' sugar, cream, and vanilla until smooth, adding more cream as needed. Drizzle over rolls.
