The Best Chicken Tikka Masala
Ingredients
1 1/4 cup
whole milk yogurt
1 tablespoon
grated ginger
4 teaspoons
kosher salt
1 teaspoon
red chili powder
1 teaspoon
garam masala
1 teaspoon
black pepper
1/2 teaspoon
turmeric
2 cloves
garlic

chicken thighs
4 tablespoons
ghee
1 large
onion

serrano chilies
2 teaspoons
fenugreek leaves
1 teaspoon
paprika
1 can
whole peeled tomatoes
1/4 cup
heavy cream
to taste
chopped cilantro
to serve
basmati rice
to serve
naan
Instructions
STEP 1
Marinate chicken in yogurt blend.
STEP 2
Sauté onions and chilies in ghee.
STEP 3
Add spices and tomatoes, simmer.
STEP 4
Blend sauce until smooth, return to pot.
STEP 5
Broil chicken, then add to sauce.
STEP 6
Cook until chicken is done, serve.
