The Best Chicken-Fried Steak
Ingredients

cube steaks
1/2 tsp
kosher salt
1/2 tsp
black pepper
3 tbsp
unsalted butter
1 1/2 cups
all-purpose flour
2 1/4 cups
whole milk
1 1/2 cups
cornstarch
1 tbsp
Hungarian paprika
1 tsp
garlic powder
1 cup
buttermilk
1
large egg
1 tbsp
hot sauce
4 1/2 cups
vegetable oil
Instructions
STEP 1
Sprinkle steaks with salt and pepper. Set on a rack.
STEP 2
Melt butter, stir in flour and cook. Add milk and seasonings; boil.
STEP 3
Whisk in remaining flour, cornstarch, paprika, and garlic powder in a bowl.
STEP 4
In another bowl, whisk buttermilk, egg, and hot sauce. Dredge steaks in flour.
STEP 5
Pour buttermilk into seasoned flour, mix until clumps form. Coat steaks.
STEP 6
Pour oil into skillet, heat to 350°F. Fry steaks until golden brown.
STEP 7
Serve gravy over chicken-fried steak.
