The Best Chicken Cutlets
Ingredients

boneless, skinless chicken breasts
1 cup
all-purpose flour
1 tbsp
kosher salt
2 tsp
granulated garlic
2 tsp
onion powder
1 tsp
crushed red pepper flakes

large eggs
2 1/2 cups
panko breadcrumbs
1/2 cup
grated Pecorino-Romano
1 stick
unsalted butter
1/2 cup
olive oil

Instructions
STEP 1
Preheat oven to 200°F; prepare baking sheet.
STEP 2
Slice chicken into 8 equal pieces, and pound to 1/4 inch thick.
STEP 3
Combine flour with salt, garlic, onion powder, and red pepper flakes in a shallow dish.
STEP 4
Beat eggs with water in another shallow dish.
STEP 5
Mix panko, Pecorino Romano, salt, garlic, onion powder, and red pepper flakes in a third dish.
STEP 6
Dredge chicken in flour, dip in eggs, then coat with breadcrumbs.
STEP 7
Heat butter and olive oil in a skillet, cook chicken until golden, about 3 to 5 minutes per side.
STEP 8
Serve with lemon wedges, if desired.
