The Best Caesar Salad
Ingredients
3 tablespoons
extra-virgin olive oil
2 tablespoons
unsalted butter
2 cloves
garlic, crushed
Kosher salt

rustic bread

freshly grated Parmesan
Freshly ground black pepper

2 anchovies packed in oil

1 egg yolk

extra-virgin olive oil
5 tablespoons
freshly grated Parmesan

2 romaine hearts

Instructions
STEP 1
Preheat the oven to 400 degrees F.
STEP 2
For the croutons: Heat olive oil and butter in a saucepan, add garlic and salt, and let infuse for 10 minutes.
STEP 3
Toss bread pieces in the garlic mixture, bake until golden brown for 8 to 10 minutes.
STEP 4
For the salad: Soak anchovies, rinse, and chop finely; mash with garlic to paste.
STEP 5
Combine anchovy paste, egg yolk, mustard, and lemon juice in a bowl; whisk and slowly add olive oil until emulsified.
STEP 6
Stir in Parmesan, season with salt and pepper.
STEP 7
Toss lettuce and croutons with the dressing, top with Parmesan, and serve immediately.
