Thai Steamed Salmon
Ingredients
1 bunch
coriander

mint leaves
1 tsp
chopped ginger
3 cloves
garlic
1 tsp
salt
1 large
red chilli
juice of 2
limes
1 tbsp
nam pla (fish sauce)
2 x 175g
salmon fillets
4
bok choi
1 cup
basmati rice
1 chilli
finely sliced
1 bunch
coriander
pinch
salt
1 lime
cut into wedges
Instructions
STEP 1
Blend coriander, mint, ginger, garlic, salt, chilli, lime juice, and fish sauce until smooth.
STEP 2
Marinate salmon fillets in half of the sauce for 20 minutes.
STEP 3
Cook the rice in boiling water per package instructions.
STEP 4
Steam bok choi on the bottom layer and salmon on top for 6-8 minutes until cooked through.
STEP 5
Stir sliced chilli and chopped coriander into the drained rice, season with salt, and serve on plates.
STEP 6
Arrange salmon and bok choi over the rice, drizzle with reserved sauce, and serve immediately with lime wedges.
