Sweet Potato and Gruyere Gratin
Ingredients
3/4 cup
whipping cream
3/4 cup
milk
1/4 cup
unsalted butter
2 cloves
garlic, minced
1 tablespoon
parsley, chopped
1 tablespoon
thyme, chopped
1 tablespoon
sage, chopped
1 tablespoon
rosemary, chopped
1 1/2 teaspoons
salt
3/4 teaspoon
black pepper
3 pounds
sweet potatoes, sliced
1 1/2 cups
Gruyère cheese, shredded
1 piece
aluminum foil
Instructions
STEP 1
Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish.
STEP 2
Combine cream, milk, butter, and garlic in a saucepan; bring to a simmer. Off heat, stir in parsley, thyme, sage, rosemary, salt, and pepper.
STEP 3
Arrange 1/2 sweet potatoes in the dish, pour 1/2 cream mixture on top, sprinkle with 1/2 Gruyère cheese. Repeat layers and cover with aluminum foil.
STEP 4
Bake for 30 minutes. Remove foil; continue baking until bubbly and golden brown, about 15 minutes. Let sit for 10 minutes before serving.
