Super Greens Soup

Ingredients

olive oil
2 cloves
garlic
1 teaspoon
cumin
1 cup
broccoli, chopped
2 cups
spinach
1 can
cannellini beans, drained
4 cups
vegetable broth

coriander, chopped
to taste

Instructions

Add chopped garlic and cumin, and sauté for a few minutes until fragrant.

Add chopped broccoli and spinach, and cook for a few minutes until they start to wilt.

Stir in the cannellini beans and vegetable broth, and bring to a boil.

Reduce heat and let simmer for about 10 minutes.

Add lemon juice and chopped coriander, then blend the soup until smooth.

Season with salt and pepper to taste, and serve hot.
