Summer Pasta With Zucchini, Ricotta and Basil

Ingredients
3 tablespoons
Extra-virgin olive oil
1 small
Onion, finely diced
2 pounds
Zucchini, sliced thin
to taste
Salt and pepper
2 cloves
Garlic, minced
1 ounce
Basil, about 2 cups
1 pound
Ziti or dry pasta
8 ounces
Ricotta, about 1 cup
pinch
Crushed red pepper
Zest of 1
Lemon
2 ounces
Grated Parmesan, about 1 cup
Instructions
STEP 1
Boil water in a pot.
STEP 2
Cook onions in olive oil until softened.
STEP 3
Add zucchini; season and cook until soft.
STEP 4
Make basil paste by pounding garlic and basil with salt.
STEP 5
Cook ziti until al dente and drain, reserving water.
STEP 6
Mix cooked pasta with zucchini and other ingredients.
STEP 7
Stir in basil paste and bake before serving.
