Heat oven to 450°F. Scrub 1 lb fingerling potatoes with water; then, quarter each potato lengthwise.
STEP 2
On a large rimmed baking sheet, toss fingerling potatoes with 1 tbsp oil and 1/4 tsp salt. Roast until deep golden brown, about 20 minutes. Meanwhile, prepare the steaks.
STEP 3
Season 2 strip steaks with 1/2 tsp salt and 1/2 tsp pepper. Heat a 12-inch skillet over medium-high heat for a minute, then add 1 tbsp oil. Cook steaks until desired doneness, about 3 minutes on each side for medium-rare. Let rest for at least 5 minutes before slicing.
STEP 4
In a small bowl, combine 2 tbsp softened butter with 1 tbsp pesto. Serve steaks with French fries and pesto butter.
