Spicy Mango Avocado Chicken Tacos

Instructions

While the chicken is marinating, prepare the spicy mango salsa. In a mixing bowl, combine 1 ripe mango (diced), 1 avocado (diced), 1/2 small red onion (finely chopped), 1 jalapeño (seeded and minced), the juice of 1 lime, and a pinch of salt. Mix gently and set aside.

Once the chicken has marinated, heat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Let it rest before slicing.

Warm the taco shells in the oven (350°F) for about 5 minutes or until they are slightly crispy.

Assemble the tacos. Take a warmed taco shell, fill it with sliced grilled chicken, and top generously with the spicy mango salsa. Garnish with fresh cilantro if desired.
