Slaw of Many Colors
Ingredients
10 cups
red cabbage, chopped
1 cup
green bell pepper, chopped
1 cup
onion, chopped
1 cup
mayonnaise
1/2 cup
cider vinegar
1/2 cup
powdered sugar
1 tsp.
salt
1 tsp.
black pepper
1 3/4 cups
tomato, chopped
Instructions
STEP 1
Combine cabbage, bell pepper, and onion in a large bowl.
STEP 2
In a small bowl, whisk together mayonnaise, vinegar, powdered sugar, salt, and pepper until smooth.
STEP 3
Pour dressing over vegetables, tossing well to combine. Cover and chill at least 2 hours.
STEP 4
When ready to serve, stir in tomato and season to taste with additional salt and pepper.
STEP 5
Chill, covered, up to 5 days.
