Preheat oven to 250°F (120°C). Pour wine into roasting pan; set aside.
STEP 2
Combine paprika, black pepper, garlic salt, parsley, and marjoram in a bowl. Rub chicken with spice mixture. Place celery and onion in chicken cavity and put chicken in pan.
STEP 3
Cover and bake for 4 to 5 hours until juices run clear and chicken reaches 165°F (74°C).
STEP 4
Remove chicken from pan, cover with foil, and rest for 10 minutes before serving.
