Simple Lentil Dhal

chopped tomatoes

Instructions

In a large saucepan, heat a little oil over medium heat and add the chopped onion, cooking until soft.

Add the garlic, ginger, cumin, paprika, and chilli, cooking for another minute until fragrant.

Stir in the lentils, coconut milk, and chopped tomatoes, then bring to a simmer.

Cook for about 20-25 minutes, stirring occasionally, until the lentils are tender and the mixture is creamy.

Season with salt and pepper to taste, and serve warm.
