Shrimp Scampi with Linguini

Ingredients

linguini
4 tablespoons
butter
4 tablespoons
extra-virgin olive oil

shallots, finely diced
2 cloves
garlic, minced
Pinch
red pepper flakes, optional

shrimp, peeled and deveined
Kosher salt and
black pepper
1/2 cup
dry white wine
Juice of 1
lemon
1/4 cup
parsley, finely chopped
Instructions

Add salt and linguini; cook until al dente.

Drain the pasta.

In a skillet, melt butter with olive oil.

Sauté shallots and garlic until translucent.

Add shrimp, season with salt and pepper, and cook till pink.

Remove shrimp; add wine and lemon juice, then boil.

Stir in butter and oil; return shrimp and pasta.
