Sheet Pan Meatballs with Tomato Salad and Green Sauce
Ingredients

walnuts

paprika
1 teaspoon

panko
1 lb
ground beef

small baguette
1 cup
tzatziki
1 lb
cherry tomatoes, halved
1
garlic clove, grated
2 tablespoons
olive oil
1 tablespoon
vinegar or lemon juice
1 tablespoon
minced herbs
to taste

cucumber, sliced
Instructions
STEP 1
Preheat the oven to 425 degrees.
STEP 2
Make your tomato salad and add sliced cucumbers.
STEP 3
Pulse garlic, parsley, cilantro, capers, and walnuts in a food processor until finely chopped.
STEP 4
Set aside half of this mixture for the sauce; mix the remaining into a bowl with meatball ingredients.
STEP 5
Roll the mixture into balls and bake for 10-12 minutes.
STEP 6
For the sauce, mix the remaining flavor base with lemon zest, lemon juice, olive oil, salt, and pepper.
STEP 7
Serve meatballs over tzatziki with tomato salad and drizzle the green sauce on top.
