Seaweed Soda Bread

400g
plain flour
1½ tbsp
dried seaweed flakes
1 tsp
bicarbonate of soda
1 tsp
fine sea salt
¼ tsp
freshly ground black pepper
300ml
buttermilk
Instructions
STEP 1
Preheat the oven to 160°C fan/gas 4. In a large bowl, stir together the flour, seaweed, bicarbonate of soda, salt, and pepper. Make a well in the centre and add the buttermilk. Use your hand to mix into a rough dough.
STEP 2
Dust a baking tray with flour. Shape the dough into a plump circle (15cm diameter) and place it in the centre. Slash the dough into quarters without cutting all the way through. Brush the top with buttermilk.
STEP 3
Bake for 40-45 minutes until browned and sounds hollow when tapped underneath. Cool on a wire rack and enjoy the same day.
