Savory Spinach & Feta Omelette

Fresh spinach
1/4 cup
Feta cheese

In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.

Add 1/2 cup of fresh spinach to the skillet and sauté for about 1-2 minutes until wilted.

Pour the beaten eggs into the skillet and cook for 2-3 minutes, gently lifting the edges to allow uncooked egg to flow underneath.

Sprinkle 1/4 cup of crumbled feta cheese on top of the omelette.

Once the eggs are mostly set, fold the omelette in half and let it cook for another 1-2 minutes until the cheese begins to melt.

Carefully slide the omelette onto a plate and serve hot.
