Put the sausages in a roasting tin and place in the preheated oven. Cook for 10 minutes, then turn and cook for an additional 5 minutes until browned.

Add sliced onions to the tin. Combine dried herbs, mustard, and stock, then pour over sausages and onions. Return to the oven for 20 minutes or until cooked and thickened. Season with salt and pepper.

For the mash, boil potatoes in salted water until tender. Drain and mash.

Heat butter and milk until melted, then add to mash and mix until smooth. Set aside.

Cook peas in boiling water for 2–3 minutes or steam for 1–2 minutes. Drain and set aside.

To make the gravy, mix softened butter and flour into a paste. Remove sausages to keep warm. Place the tray on the hob, add flour mixture, and whisk until combined. Stir over medium-high heat until thickened. Return sausages to warm through.
