Preheat the oven to 160C/140C Fan/Gas 3. Slice sausages open and remove skins. Break sausage meat into a bowl. Finely chop one spring onion and add. Incorporate ginger, coriander stalks, 1 tsp soy sauce, half the garlic, chilli flakes, and sesame oil. Mix thoroughly.
STEP 2
Form the mixture into four large meatballs. Heat 1 tsp vegetable oil in a frying pan or wok. Cook meatballs for 5–10 minutes, turning often until browned and cooked. Transfer to a baking tray and keep warm in the oven.
STEP 3
Cook the noodles as per packet instructions or boil for 3 minutes. Drain and rinse under cold water.
STEP 4
Slice remaining spring onions. Heat remaining vegetable oil in the frying pan. Add garlic, chilli flakes, sliced spring onions, and carrot. Stir-fry for 2–3 minutes until soft.
STEP 5
Add noodles, beansprouts, and remaining soy sauce. Stir-fry for 2 minutes.
STEP 6
Incorporate meatballs and stir well. Top with coriander leaves and additional soy sauce if desired. Serve immediately.
