Salmon Roasted in Butter

4 tablespoons
butter
4 tablespoons
minced chervil or dill
1 fillet (1 1/2 to 2 pounds)
salmon
to taste
salt and black pepper
served with
lemon wedges
Instructions
STEP 1
Preheat oven to 475 degrees. Melt butter with half herbs in a roasting pan for 5 minutes.
STEP 2
Add salmon skin side up. Roast for 4 minutes. Peel skin off and season with salt and pepper.
STEP 3
Roast an additional 3 to 5 minutes, based on thickness and desired doneness. Portion and serve with lemon.
