Roasted Pumpkin Hummus

Instructions

Cut the pumpkin into wedges, remove the seeds, and place on a baking tray.

Drizzle with olive oil and season with salt and pepper.

Roast in the oven for 30-40 minutes until tender and slightly caramelized.

Allow the pumpkin to cool slightly, then scoop the flesh into a food processor.
