Heat oven to 400 degrees. Season chicken with salt and pepper. Dredge chicken in flour, shaking off excess.

Swirl oil in a large roasting pan, place chicken inside. Season with herbes de Provence. Add lemon, garlic, and shallots around chicken, then pour vermouth into the pan.
STEP 3
Roast for 25 to 30 minutes, baste with pan juices. Continue roasting until chicken is crisp and cooked through, about 25 to 30 more minutes.
STEP 4
Serve chicken in the pan or on a warmed platter, garnished with thyme.
