Ratatouille Orzo Traybake
Ingredients

orzo

zucchini, chopped

bell pepper, chopped

eggplant, chopped

cherry tomatoes, halved

olive oil
2 cups
vegetable stock
to taste

to taste

Instructions
STEP 1
Preheat your oven to 200°C (180°C fan).,
STEP 2
In a large baking dish, combine the orzo, chopped vegetables, and olive oil. Season with salt and pepper.,
STEP 3
Pour in the vegetable stock and stir to combine.,
STEP 4
Cover the dish with foil and bake for 25 minutes.,
STEP 5
Remove the foil and bake for an additional 10-15 minutes until the orzo is cooked and the vegetables are tender.,
STEP 6
Serve warm, garnished with fresh herbs if desired.
