Quinoa, Asparagus & Green Bean Salad
Ingredients
1 cup
quinoa
1 cup
asparagus
1 cup
green beans
1/4 cup
roasted almonds
2 tablespoons
lemon juice
1 tablespoon
miso paste
Instructions
STEP 1
Cook the quinoa according to package instructions and let it cool.,
STEP 2
Blanch the asparagus and green beans in boiling water for 2-3 minutes until tender, then drain and rinse under cold water.,
STEP 3
In a large bowl, combine the cooled quinoa, asparagus, green beans, and roasted almonds.,
STEP 4
In a small bowl, whisk together lemon juice and miso paste, then pour over the salad and toss to combine.
