Preheat oven to 200C/180C Fan/Gas 6, place baking tray upside-down.
STEP 2
For the dough, sift flour and baking powder into a bowl. Add salt and pepper, stir in oil. Make a well in the center, stir in warm water, and mix to a soft dough.

Knead dough for 2 minutes until smooth.
STEP 4
Roll dough into a 30cm disc on greaseproof paper, bake for 3 minutes.
STEP 5
Mix passata, tomato purée, herbs, salt, and pepper in a bowl.
STEP 6
Remove dough, spread with sauce, add mozzarella, pepperoni, and cheddar.
STEP 7
Bake for 15 minutes until crust is golden and cheese bubbled. Cut into wedges and serve.
