Instructions
STEP 1
Preheat the oven to 300°F.
STEP 2
Line a baking pan with foil; place pie crust on prepared pan.
STEP 3
Bring maple syrup to a boil; cook until reduced by 1/4.
STEP 4
Stir in cream; bring to a simmer, then remove from heat.
STEP 5
Whisk egg yolks and egg in a bowl; gradually add cream mixture.
STEP 6
Stir in salt, vanilla extract, and vinegar; pour into pie crust.
STEP 7
Bake in the oven until mostly set but jiggles slightly, about 1 hour.
STEP 8
Let cool before serving.
