Pumpkin Bread with Candied Ginger

light brown sugar

vegetable oil
4 ounces (113 grams)
cream cheese
4 large
eggs
1/4 cup
buttermilk
1 cup
walnuts
1/3 cup minced
crystallized ginger
Instructions
STEP 1
FOR THE TOPPING: Mix sugar, flour, and butter until combined.
STEP 2
FOR THE BREAD: Preheat oven to 350°F. Grease loaf pans and whisk flour, baking powder, and baking soda.
STEP 3
Combine pumpkin puree, salt, spices in a saucepan and cook 6-8 minutes. Remove from heat and mix in sugars, oil, and cream cheese.
STEP 4
Let mixture stand for 5 minutes, then whisk until smooth. Add egg mixture and fold in flour mixture, walnuts, and ginger.
STEP 5
Pour batter into pans and top with mixture. Bake for 45-50 minutes. Cool for 20 minutes, then transfer to a wire rack for 1.5 hours before serving.
