Pork Taco
Ingredients
1 tbsp
olive oil

red onion, thinly sliced

red pepper, thinly sliced
1-2 cloves
garlic, finely chopped

cooked pork, thinly sliced
1 tsp
ground cumin
1 tsp
ground coriander
½ tsp
chilli powder

tomatoes, roughly chopped

wholemeal wraps
4 tbsp
soured cream
¼ head
iceberg lettuce, finely shredded
¼
cucumber, thinly sliced
to taste
sea salt
to taste
black pepper
Instructions
STEP 1
Heat a large pan, add oil, onion, and pepper. Fry for 2-3 minutes until softened.
STEP 2
Increase heat, add garlic, pork, cumin, coriander, and chilli. Fry until the pork is crisp. Stir in tomatoes. Season with salt and pepper.
STEP 3
Heat wraps as instructed, divide the pork mixture among them. Top with sour cream, lettuce, and cucumber. Roll up and serve.
