Pistachio-Crusted Salmon
Ingredients
1/4 cup
crushed pistachios
2 tablespoons
panko bread crumbs
1 tablespoon
grated Parmesan cheese
1 tablespoon
butter, melted

(6 ounce) salmon fillets
to taste
salt and ground black pepper
2 tablespoons
olive oil
1 tablespoon
Dijon mustard

lemon wedges
Instructions
STEP 1
Preheat the oven to 375°F.
STEP 2
Combine pistachios, bread crumbs, Parmesan, and butter in a bowl; stir well.
STEP 3
Season salmon fillets with salt and pepper on both sides.
STEP 4
Heat olive oil in a skillet over medium heat. Sear salmon, flesh-side down, for 2-3 minutes. Turn off heat and flip salmon so skin side is down.
STEP 5
Brush tops of salmon with Dijon mustard. Top with the pistachio mixture, pressing down.
STEP 6
Bake until salmon flakes easily, about 10-12 minutes. Serve with lemon wedges.
