Peruvian Lomo Saltado

frozen French fries

beef tri tip, sliced

onion, sliced

tomatoes, sliced

distilled white vinegar
dash
soy sauce
2 tablespoons
chopped parsley
Instructions
STEP 1
Preheat the oven to 425°F.
STEP 2
Arrange frozen French fries on a cookie sheet.
STEP 3
Bake fries in the oven until golden, 22-24 minutes.
STEP 4
Meanwhile, heat oil in a pan over medium-high heat. Season beef with salt and pepper. Cook and stir beef until cooked and juices release. Remove beef with a slotted spoon.
STEP 5
Cook onions in beef drippings until translucent, 3-4 minutes. Stir in tomato and aji amarillo; cook until tomato softens. Add vinegar and soy sauce.
STEP 6
Add fries and beef to the pan. Cover and cook until beef is cooked through, about 3 minutes. Season with salt and pepper; sprinkle with parsley.
