Our Favorite Key Lime Pie

Ingredients
11 (2¼x4¾")
graham crackers
2 Tbsp.
sugar
1½ tsp.
ground cinnamon
Pinch
kosher salt
6 Tbsp.
unsalted butter, melted
1 (14-oz.) can
sweetened condensed milk
4 large
egg yolks
7 Tbsp.
fresh Key lime juice
2 Tbsp.
fresh lemon juice
1 cup
chilled heavy cream

powdered sugar

Instructions
STEP 1
Preheat oven to 350°F.
STEP 2
Pulse graham crackers, sugar, cinnamon, and salt until fine. Drizzle melted butter and combine. Press into pie plate.
STEP 3
Bake until golden brown, 8–10 minutes. Cool on rack for 15 minutes.
STEP 4
Whisk condensed milk and yolks. Add juices and whisk until thickened.
STEP 5
Pour filling into crust, bake until set, about 15 minutes. Cool for 1 hour then chill in the fridge.
STEP 6
For topping, whip cream to soft peaks, add sugar, and whip to stiff peaks. Dollop on pie and serve.
