One-pot easy chorizo pasta

Ingredients

chorizo
4 cloves
garlic

peppers (red and yellow)

button mushrooms
400g
chopped tomatoes
3 tbsp
tomato purée
1 tsp
dried chilli flakes
2 tbsp
red wine vinegar
450g
spaghetti
1 litre
boiling water
sea salt and black pepper
Spices and Seasonings
1 handful
basil leaves

Parmesan
Instructions
STEP 1
Heat a large pan over high heat, add chorizo, cook 2-3 minutes.
STEP 2
Add garlic, peppers, mushrooms; cook 2-3 minutes, stirring occasionally.
STEP 3
Stir in chopped tomatoes, tomato purée, chilli flakes, and red wine vinegar.
STEP 4
Add spaghetti, pour in boiling water; stir well.
STEP 5
Boil, reduce heat, cover; simmer 12-15 minutes until pasta is al dente.
STEP 6
Stir in basil and black pepper.
STEP 7
Serve with Parmesan and remaining basil.
