One-Pan Quinoa, Chickpeas & Greens

chickpeas

vegetable broth

onion
2 cloves
garlic
2 cups
mixed greens

olive oil

Instructions

In a large pan, heat some olive oil over medium heat and add chopped onions and garlic. Sauté until softened.

Add the rinsed quinoa, vegetable broth, and chickpeas to the pan. Bring to a boil, then reduce to a simmer.

Stir in the greens and cook until they are wilted and the quinoa is fluffy, about 15 minutes.

Season with salt and pepper to taste before serving.
