Omelet
Ingredients

eggs

fine sea salt
1 pinch
black pepper
1 to 2 teaspoons
minced fresh herbs

unsalted butter
Instructions
STEP 1
Crack eggs in a bowl; whisk with water, salt & pepper, and mix in herbs if using.
STEP 2
Heat an 8- to 9-inch nonstick skillet over high; melt butter until bubbling subsides.
STEP 3
Pour in egg mixture; reduce heat to medium and whisk until the bottom sets.
STEP 4
Tilt skillet and fold the omelet in half or thirds.
STEP 5
Flip omelet onto a plate.
