Old-Fashioned Muffins

Instructions
STEP 1
Preheat the oven to 375°F. Butter muffin pans.
STEP 2
Mix the flour, baking powder, salt, and sugar in a large bowl.
STEP 3
Add the egg, milk, and butter, stirring until just damp; do not smooth.
STEP 4
Spoon into muffin cups, filling each about two-thirds full.

Bake for about 20 to 25 minutes.

VARIATIONS:

Blueberry Muffins: Increase sugar to ½ cup. Toss 1 cup blueberries in ¼ cup reserved flour; fold into batter last.

Pecan Muffins: Increase sugar to ¼ cup. Add ½ cup chopped toasted pecans. Sprinkle with sugar and nuts before baking.

Whole-Wheat Muffins: Substitute ¾ cup whole-wheat flour for 1 cup all-purpose flour.

Date or Raisin Muffins: Add ½ cup chopped pitted dates or ⅓ cup raisins.

Bacon Muffins: Stir in 3 strips of cooked, crumbled bacon into the batter.

Mini Muffins: Use a mini muffin tin; bake at 375°F for 10–13 minutes (makes about 36 mini muffins).
