Oatmeal Raisin Cookies
Ingredients

all-purpose flour

baking soda
1 teaspoon
baking powder
1 teaspoon
kosher salt

unsalted butter, softened

sugar

dark brown sugar, firmly packed

oats (not instant)
1 1/2 cups
raisins
Instructions

Whisk dry ingredients; set aside.

Combine wet ingredients with a hand mixer on low.

Increase speed to high and beat until fluffy and light in color.

Stir the flour mixture into the creamed mixture until no flour is visible.

Add oats and raisins; stir to incorporate.

Use a #40 cookie scoop and press against side of bowl to level dough.

Drop cookies 2 inches apart onto greased baking sheet.

Bake for 11-13 minutes until golden but still moist underneath.

Let cookies sit on baking sheet for 2 minutes before transferring to cool.
